Cherry Quinoa Porridge

 

Ingredients: (Makes 1)

  • Red Quinoa 60g
  • Frozen Cherries 60g
  • Chia Seeds 10g or 2 tsp
  • Apple Juice 300ml
  • Water 50ml
  • Yoghurt 1 tbsp high protein
  • Blueberries handful fresh or frozen
  • Pumpkin Seeds 1 tsp

Instructions:

To a pot, add the liquids, red quinoa, frozen cherries and chia seeds. Simmer on
low-medium heat until the quinoa has absorbed the majority of the liquid. It
should be a thicker texture, not watery. This may take up to 20 minutes.

Leave the porridge to sit for 3 to 5 minutes before transferring it to a bowl
(optional). Add a tbsp of yoghurt and top with blueberries (or berries of your
choice) and the pumpkin seeds.
