CHARRED CHICKEN POKE BOWL
Ingredients:
- 50g couscous (raw)
- 100ml water
- 1 tablespoon sugar free syrup
- 1 tablespoon soy sauce
- 1 teaspoon fresh lime juice
- 150g white meat boneless (chicken breast/ turkey breast/ lean pork)
- 150g pumpkin
- 100g spinach
- 50g shredded cabbage
- 50g mango, peeled, diced
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions:
- Cook couscous according to packet instructions. Season and set aside.
- In a medium bowl combine honey, soy and lime juice. Marinate chicken in soy mixture for 5 minutes. Toss remaining marinade through cooked couscous.
- Heat a char grill on high. Soak the pumpkin in salt water for 10 minutes and onion. Next Grill for 7-8 minutes, turning, until charred and tender. Cut onions into batons. Grill chicken for 5 minute each side or until cooked through. Slice into large pieces.
- Serve couscous topped with cabbage, char grilled vegetables, chicken, and mango. Top with sesame seeds and crushed pepper.
