CHARRED CHICKEN POKE BOWL

 

Ingredients:

  • 50g couscous (raw)
  • 100ml water
  • 1 tablespoon sugar free syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh lime juice
  • 150g white meat boneless (chicken breast/ turkey breast/ lean pork)
  • 150g pumpkin
  • 100g spinach
  • 50g shredded cabbage
  • 50g mango, peeled, diced
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions:

  1. Cook couscous according to packet instructions. Season and set aside.
  2. In a medium bowl combine honey, soy and lime juice. Marinate chicken in soy mixture for 5 minutes. Toss remaining marinade through cooked couscous.
  3. Heat a char grill on high. Soak the pumpkin in salt water for 10 minutes and onion. Next Grill for 7-8 minutes, turning, until charred and tender. Cut onions into batons. Grill chicken for 5 minute each side or until cooked through. Slice into large pieces.
  4. Serve couscous topped with cabbage, char grilled vegetables, chicken, and mango. Top with sesame seeds and crushed pepper.
