CAULIFLOWER FRIED “RICE”
Ingredients:
- 250g cauliflower, grated
- 1 piece kale leaves
- 1 teaspoon butter (7g)
- 150g egg white
- 1/4 teaspoon fresh ginger
- 1/2 teaspoon turmeric
- 20g coriander
- 2 tablespoon coconut water
- 1/2 Lime
- 20g spring onions
- 10g parsley
- 10g mint leaves
- 30g roasted almonds
- 1/2 tablespoon tamari soy sauce
- 1/2 tablespoon Mirin
- 1 Green Chilli
- Salt and pepper to taste
Instructions:
- Chop the cauliflower into small pieces and place into a food processor.
- Process until it looks like white rice. If you don’t have a food processor, you can also do this on a hand grater.
- Heat the butter in a pan over a medium to high heat.
- Add ginger, turmeric and coriander along with chopped green chilli, then stir fry for a few seconds until aromatics are released.
- Add the cauliflower and kale and stir fry for a few minutes until hot and fragrant.
- Deglaze the pan and add a splash of coconut water or water to the pan.
- Add the beaten egg whites and mix through.
- Add spring onion, coriander, parsley, mint, tamari and mirin.
- Mix in the almonds.
- Squeeze over a little lime and serve.
