Ingredients: The ingredient amounts are for two servings.

  • Baby Potatoes 300g or 10.6oz
  • Olive Oil 1 tsp
  • Paprika ½ tsp
  • Garlic Powder ½ tsp
  • Black Beans 1 tin, drained & rinsed
  • Cumin ½ tsp
  • Paprika ½ tsp
  • Red Pepper 1, small
  • Cherry Tomatoes 6
  • Avocado 1, small
  • Salt & Pepper pinch
  • Sausgages 250g or 8.8oz, reduced fat
  • Eggs 4
  • Salt & Pepper pinch

Instructions:

Preheat the oven to 200°C. Toss the diced potatoes with olive oil, smoked paprika,
garlic powder, salt, and pepper. Roast for 20 to 25 minutes until golden and tender.


Heat a pan over medium heat. Add the sausage mince and break it up with a
spoon. Cook until browned and cooked through. Set aside.


Add the black beans to a small pan with cumin, smoked paprika, salt, and pepper.
Heat gently for 5 minutes.


Whisk the eggs with a splash of milk and seasoning. Cook in a non-stick pan over
low to medium heat, stirring gently until just set.


Divide the roasted potatoes between two bowls. Add the sausage mince,
scrambled eggs, and black beans.Top with diced red pepper, sliced cherry
tomatoes, avocado, and coriander.
