BOILED SPICY EGG SALAD WITH ONIONS AND TOMATOES

- 2 whole eggs
- 150g egg whites
- 1 tablespoon Water
- ½ tablespoons of Vinegar
- 1 teaspoon of salt
To make the egg salad:
- 2 medium-sized tomatoes
- 1 large onion
- 2-3 green chillies chopped
- 100g salad leaves washed and drained completely
- Salt to season
- 1 tablespoon sambal oelek
Method:
How to hard boil the eggs:
- Place the cooking pan over the stove and gently place the eggs in the pan. Pour enough water to completely submerge the all the 5 eggs. Add 1 teaspoon (Vinegar and salt) this would help with removing the eggshell easily. Boil the eggs for exactly 13 minutes, remove them from the stove. Drain the boiling water and place them in your sink under slow running water from your tap.
How to make the egg salad:
- Meanwhile, slice the onions, green chillies, tomatoes and place them in a bowl, season with salt, pepper, and lime. Combine well.
- Place the green salad leaves on a platter, add a layer of the onion, tomato, green chillies and chili paste over it. Set aside. By now the eggs should be ready for you to peel.
- Gently tap the eggs on your kitchen sink surface while moving the egg, so small cracks appear on the whole egg. Now peel the eggshells. Once you have peeled eggshells off separate the egg yolks from the egg whites.. slice up the hard boiled egg whites and set a side. (NOTE- use only 2 boiled egg yolks for the topping.)
- Add the rest of the onions, spread a little of the sambal Olek over the yolk, season with a pinch of salt and pepper. If you are going to serve the salad late then cut the onions, tomatoes a little late (30-45 minutes before serving time) and keep them separate.
- Assemble everything 10 minutes before serving so the egg salad looks fresh.
