Blueberry Chia Pudding

 

Ingredients: (Makes 1)

  • Almond Milk 120ml or 4fl oz, unsweetened
  • Blueberries 40g or 1.4 oz
  • Greek Yoghurt 200g or 6.7oz, 0% fat
  • Chia Seeds 2 tbsp
  • Vanilla Extract 1/2 tsp

Instructions:

In a bowl or a jar, combine the chia seeds, almond milk and vanilla extract (if
using). Stir well to ensure the chia seeds are evenly distributed and not clumping
together.

Let the chia mixture sit for 5 minutes, then stir again to break up any clumps. Cover
and refrigerate for at least 2 hours, or overnight, until the pudding achieves a thick
and gelatinous consistency.

Once the chia pudding has set, prepare the blueberry yogurt layer by lightly
mashing the blueberries with a fork for a burst of flavor. Mix the mashed
blueberries with the Greek yogurt. Or choose a blueberry yoghurt.

Spoon the blueberry yogurt mixture on top of the set chia pudding. Top with a
handful of fresh blueberries and an optional tsp of granola
