Beetroot Shots

 

Ingredients: The ingredient amounts are for 12 shots.

  • Beetroot 2.5kg or 88oz
  • Water 500ml or 17fl oz
  • Lemon Juice 5 lemons

Instructions:

Peel and chop the beets into small cubes.


Work in batches. Add beets + splash of water, blend until smooth. Pass the puree
through cheesecloth or nut milk bag. Squeeze hard to extract juice.


Simmer gently (don’t boil) until total liquid is ~1 L. This gives a more concentrated
70 ml shot.


Allow to cool before you stir in the lemon juice. Pour into sterilised 70 ml glass
bottles (12-14 shots). Seal tightly and refrigerate.
