Beef Pad Kra Pao

Ingredients: (Makes 4)
- Beef Mince 500g or 17.6oz, extra lean
- Eggs 4
- Basmati Rice 60g or 2.1 oz per portion
- Red Onion 1 medium
- Olive Oil 2 tsp
- Fish Sauce 1 tbsp
- Red Chilli 2
- Sweetener 1 tbsp
- Garlic 8 cloves
- Soy Sauce 2 tbsp
- Fresh Basil 20g or 0.7oz
- Oyster Sauce 1 tbsp
Instructions:
Rinse and dry the Thai basil leaves using a paper towel. Set aside. Finely chop the
shallots, garlic, and chilies. Heat 1 tsp olive oil in a wok or pan over high heat. Add
the chopped shallots, garlic, and chilies. Stir-fry for 30 seconds until fragrant.
Add the ground beef to the wok, breaking it apart as it cooks. Stir-fry for 3-5
minutes, until 80% cooked through. Pour in the soy sauce, oyster sauce, fish sauce
and sweetener. Stir well and cook for another 1-2 minutes, allowing the sauce to
coat the beef evenly.
Add a large handful of Thai basil leaves. Stir for 1 minute until wilted.
In a separate pan, heat 1 tsp oil over medium-high heat. Crack in one egg per
portion and fry until the edges are crispy, leaving the yolk slightly runny. Serve the
Beef Pad Kra Pao over jasmine or basmati rice. Top with the crispy fried egg and
enjoy!
