BBQ CHICKEN POWER BOWL

Ingredients:
- 150g boneless chicken breast
- 2 tablespoon BBQ sauce
- 65g rice (raw weight)
- 130ml water
- 50g kale
- 80g shredded cabbage
- 50g avocado
- 1 tablespoon tahini
- Salt to taste
Instructions:
- Cook the rice in 130ml water for approximately 15-25 minutes with a pinch of salt.
- Preheat the oven to 375 degrees.
- Cut the chicken breast in half (longways).
- Place the chicken on a baking sheet and glaze it with BBQ sauce.
- Bake for 30 minutes or until fully cooked.
- Toss the kale, cabbage, and tahini. Season with salt to taste.
- Place the cooked rice into a bowl then top with the sliced baked chicken, avocado, and salad.
- Serve and enjoy!
