Avocado Tuna Bagel

Ingredients: (Makes 1)
- Tuna 2 tins
- Spring Onion 1
- Fresh Dill 1 tbsp, chopped
- Chilli Flakes 1 pinch (optional)
- Plain Bagel 2
- Avocado 1 small
- Sweetcorn 3 tbsp
- Cherry Tomata 4
- Rocket 2 handfuls
- Light Mayonnaise 1 tbsp
- JalapeƱo in Brine 2 tbsp
Instructions:
In a mixing bowl, combine the mashed avocado, tuna, light mayo, chopped cherry
tomatoes, sweetcorn, chopped spring onions, chopped jalapeƱos, chilli flakes, and
chopped dill. Stir everything together until well mixed.
Slice the bagels in half and toast them lightly if desired. Place a handful of rocket
on each bagel half, creating a bed for the tuna mixture.
Spoon a generous amount of the tuna and avocado mixture onto the rocket layer
on each bagel half
