AIR-FRYER BERRY OATMEAL BALLS
Ingredients:
- 45g oats
- 240ml almond milk
- ½ teaspoon vanilla extract
- 1 tablespoon sugar free syrup
- 1/4 teaspoon cinnamon
- 100g frozen blueberries or strawberries
- 1 whole egg beaten
- 50g Panko crumbs
- 30g all-purpose flour
- Salt to taste
Instructions:
- Pour the milk into a medium saucepan. Bring to a boil over medium-high heat.
- Add the oats and salt to the pan, stir, and reduce the heat to a low simmer.
- Cook for 10-15 minutes, stirring often until the oats are thick and cooked through.
- Remove from the heat and stir in the vanilla, sugar free syrup, cinnamon, and blueberries or chopped strawberries.
- Allow cooling completely before moving on.
- Preheat air fryer to 350ºF
- Place egg, panko, and flour in three separate bowls. Using 1 1/2 tablespoon cookie scoop, make a ball with your cooled oat mixture.
- Dip oat ball in the flour, then the egg, then the panko crumbs until evenly coated.
- Place in the cooking basket in the air fryer. You may need to cook in batches.
- Fry for 12-14 minutes, shaking halfway through, until golden brown.
