AIR FRIED SPICED CHICKEN AND VEGETABLES

 

Ingredients:

(makes 01 serving) 

Spiced Chicken

  • 150g chicken breast
  •  ½ tsp. olive oil
  • ½ tsp. chili powder
  • ½ tsp. paprika
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder
  • ½ tsp. salt
  • ½ tsp. pepper
  • ¼ tsp. cumin

Vegetables

  • 1 red onion
  • 150g potato
  • 100g carrots
  • 1 pinch salt

Method:

  • Preheat Air Fryer: Set air fryer to “air fry” and preheat to 325 degrees.
  • Prep Chicken: In a small bowl combine all the chicken spices (chili powder, onion powder, garlic powder, salt, pepper, cumin and paprika) to make a spice rub. Coat the chicken breasts with olive oil followed by the spice rub. Set aside.
  • Prep Vegetables: Peel carrots and potato. Cut the carrots into 1/2″ – 1″ pieces and the potatoes into 1/2″ – 1″ cubes. Cut the onion in half and removed the outer layer. Then cut each half into fourths. Make sure to separate all the layers of the onion. Put all veggies in a bowl. Coat with a little olive oil and a pinch of salt.
  • Air Fry: Put the vegetables into the preheated air fryer basket. Place the chicken breasts on top of the vegetables and close the air fryer. Cook for 35 minutes. Halfway through cooking, flip the chicken and give the veggies a good shake.
