Lemon Blueberry Donut Holes

Ingredients: The ingredient amounts are for six servings.
- Cottage Cheese 170g or 6oz, 0% fat
- Blueberries 30g or 1oz
- Powdered Sugar 20g or 0.7oz
- Vanilla Extract ¼ tsp
- Semi-Skim Milk 1 to 2 tbsp
- Flour 120g or 4.2oz
- Egg 1
- Honey 1 tbsp
- Lemon Zest 1 lemon
- Baking Powder 2 tsp
- Baking Soda ¼ tsp
- Salt ¼ tsp
Instructions:
n a large mixing bowl, whisk together the flour, lemon zest, baking powder, baking
soda, and salt.
Add the blended cottage cheese, egg, and honey, then stir well with a spoon until
the mixture starts to come together. If the dough feels too wet, add an extra 1 to 2
tablespoons of flour as needed.
Gently fold in the blueberries. Take about 1.5-2 tablespoons of dough at a time and
carefully roll into 6 balls.
Preheat the air fryer and lightly coat the basket with non-stick spray. Place the
dough balls into the air fryer, making sure not to overcrowd the basket. Lightly
spray the tops with non-stick spray.
Air fry at 180°C for 6 to 8 minutes, or until golden and cooked through. Remove
from the air fryer and leave to cool completely. While the donut holes are cooling,
whisk together the powdered sugar, vanilla extract, and milk until smooth to make
the icing.
Once the donut holes are fully cooled, dip them into the icing and leave to set for
10 to 15 minutes before serving.
