Buffalo Chicken Tacos with Basil Sauce

Ingredients: The ingredient amounts are for three portions.
- Chicken Breast 500g or 17.6oz
- Honey 1 tbsp
- Garlic Powder 1 tsp
- Onion Powder 1 tsp
- Paprika 1 tbsp
- Salt 1/2 tsp
- Black Pepper 1 tsp
- Olive Oil 1 tbsp
- Buffalo Sauce 125g or 4.4oz
- Soft Taco 6, small
- Mozzarella 80g or 2.8oz, reduced fat
- Basil 10g or 0.35oz, fresh
- Greek Yoghurt 80g or 2.8oz, 0% fat
- Lemon Juice 1 lemon
- Salt pinch
- Black Pepper twist
- Coriander 3 tbsp, chopped
Instructions:
Add the chopped chicken to a bowl and coat it with the garlic powder, onion
powder, paprika, salt, and black pepper.
Heat the olive oil in a skillet over medium-high heat for 1 minute. Add the chicken
and cook for 8 to 10 minutes until browned and cooked through. Take the pan off
the heat and stir in the buffalo sauce, coriander, cheese and honey. Mix until the
chicken is fully coated.
As the chicken is cooking, add the basil, yogurt, lemon juice, salt, and black pepper
to a blender. Blend until smooth. Add a splash of olive oil if you want it richer.
Spoon the buffalo chicken on top and then add a drizzle of the basil sauce.
