Breakfast Bagels

 

Ingredients: The ingredient amounts are for four portions.

  • Egg 8
  • Bagel 4
  • Bacon Medallion 4
  • Cottage Cheese 100g or 3.5oz, fat free
  • Cheddar Cheese 50g or 1.75oz, half fat
  • Mayonnaise 20g or 0.7oz, reduced fat
  • Fresh Chives 2 tbsp, chopped
  • Sriracha Sauce 10g or 0.35oz

Instructions:

Pan-fry the bacon medallions over medium heat until crispy. Remove from the
pan and roughly chop. Set aside.


In a large bowl, whisk together the eggs, cottage cheese, grated cheddar,
chopped chives, salt, and pepper. Stir in the chopped bacon.


Pour the mixture into a lined baking dish (roughly 20x20cm) and bake at 180°C
(356°F) for 15–20 minutes, or until fully set in the center. Let cool slightly.


Slice the baked frittata into 4 equal squares. Slice the bagels in half and toast if
desired. Add one square of frittata per bagel and top with 1 tsp sriracha mayo.
