Air Fryer Chicken Satay Skewers

Ingredients: The ingredient amounts are for 6 Skewers.
- Chicken Breast 4 (125g or 4.4oz per breast)
- Coconut Milk 200ml or 6.7 fl oz
- Lime Juice 2 limes
- Coconut Milk 40ml or 1.3fl oz
- Sesame Oil 1 tbsp
- Soy Sauce 1 tbsp
- Peanuts 10g or 0.35oz
- Fresh Ginger 1 tsp
- Chilli Flakes 1 tsp
- Peanut Butter 1 tbsp
- Spring Onions 2
- Honey 1 tbsp
- Curry Powder 2 tbsp
Instructions:
In a bowl, combine the chicken chunks with 1 tbsp sesame oil, lime juice, 1 tbsp
curry powder, and 4 tbsp coconut milk. Mix well, cover, and let marinate for at least
30 minutes (longer for more flavour).
Thread the marinated chicken onto skewers. Place into an air fryer basket and
cook at 200°C (392°F) for 17 minutes, turning halfway if needed, until golden and
fully cooked through.
In a small bowl or saucepan, combine all the satay sauce ingredients: 1 heaped
tbsp peanut butter, 200ml coconut milk, 1 tbsp soy, 1 tbsp honey, 1 tbsp curry
powder, 1 tsp ginger. Simmer on low heat for 2–3 minutes, stirring until smooth and
creamy.
Plate the skewers and drizzle generously with satay sauce. Top with crushed
peanuts, chopped spring onions, chilli flakes, and a squeeze of fresh lime.
