Quick Honeycomb Crunch

 

Ingredients: The ingredient amounts are for five portions.

  • Sugar 100g or 3.5oz
  • Water 50ml or 1.7fl oz
  • Baking Powder 1 tsp

Instructions:

Line a bowl or small tray with baking paper, ensuring it’s ready before you start –
the mixture sets fast.


Combine the sugar and water in a large microwave-safe bowl. Stir well to dissolve
the sugar.


Microwave in 30-second bursts, watching closely. It should take around 2–3
minutes total for the mixture to bubble and turn a deep golden orange. (Be
cautious – it gets very hot.)


Remove from the microwave and let it sit for 30 seconds. Then quickly stir in the
bicarbonate of soda. The mixture will foam up instantly – do not overmix. Let it
naturally settle and rise.


Cool in the fridge for 10–15 minutes or until completely set and crisp. Break into
chunks and enjoy!
