Thai Style Ginger Beef

Ingredients: The ingredient amounts are for two portions.

  • Beef Stock 75ml or 2.5 fl oz
  • Oyster Sauce 1 tbsp
  • Fish Sauce 1 tbsp
  • Soy Sauce 1 tbsp
  • Red Onion 1, medium
  • Garlic 2 cloves
  • Ginger 1 tbsp, grated
  • Red Chilli 2
  • Pak Choi 250g or 8.8oz
  • Thai Basil Leaves 10g or 0.35oz
  • Sugar 1 tsp
  • Flat Rice Noodles 2 nests
  • Olive Oil 1 tbsp
  • Beef Strips 200g or 7oz

Instructions:

In a small bowl, mix the beef stock, oyster sauce, fish sauce, soy sauce, and sugar.
Set aside.

Prepare the rice noodles according to package instructions. Drain, rinse under cold
water, and set aside.

Heat the oil in a large frying pan or wok over high heat. When the oil is hot and
shimmering, add the sliced steak and red onion. Stir-fry for 2 minutes.

Add the garlic, ginger, and chillies to the pan. Fry for 1 minute, stirring constantly to
prevent burning. Toss in the pak choi and stir-fry for 1–2 minutes until just wilted
and the beef is cooked through.

Pour in the sauce mixture. Stir and let simmer for 1–2 minutes until slightly reduced.
Remove from the heat and stir in half of the Thai basil leaves.

Divide the rice noodles between two bowls, spoon the beef stir-fry over the top,
and garnish with the remaining Thai basil leaves.
