Creamy Vanilla Rice Pudding

Ingredients: (Makes 2)
- Semi Skim Milk 500ml or 17fl oz
- Single Light Cream 100ml or 3.4oz
- Arborio Rice 80g or 2.9oz
- Jam 2 tbsp
- Honey 1 tbsp
- Vanilla Extract ½ tsp
- Ground Cinnamon ½ tsp
- Nutmeg ¼ tsp
Instructions:
Add the arborio rice, semi-skimmed milk, light cream, cinnamon, nutmeg, vanilla
extract, lemon zest, and honey to the pan. Stir gently to combine.
Bring to a gentle simmer over medium heat, stirring frequently to prevent the rice
from sticking to the bottom of the pan.
Once simmering, reduce the heat to low and cook uncovered for around 50
minutes, stirring every 5 minutes. The rice should become tender and the liquid
should reduce to a creamy, pudding-like consistency.
If the mixture thickens too much before the rice is fully cooked, add a splash of
milk to loosen it slightly.
Remove the lemon zest and taste the pudding. Adjust the sweetness or add a
touch more vanilla if desired.
Spoon into bowls or jars and serve warm. For an extra indulgent finish, top with 1–2
tablespoons of jam.
