Zesty Pomegranate Crunch Salad

 

Ingredients: (Makes 4)

  • Cucumber 1, large
  • Red Cabbage 200g or 7oz
  • Pomegranate 200g or 7oz
  • Red Pepper 1, large
  • Orange Zest 1 orange
  • Spring Onion 2
  • Honey 2 tsp
  • White Wine Vinegar 1 tbsp
  • Salt ½ tsp
  • Mint 2 tsp, dried
  • Orange Juice 1 orange
  • Coriander 50g or 1.7oz
  • Olive Oil 3 tbsp

Instructions:

Add all the chopped vegetables, pomegranate seeds, and coriander into a large
salad bowl.


In a small bowl or jar, whisk together the olive oil, orange juice, vinegar, dried mint,
honey, and sea salt until well combined.


Pour the dressing over the salad and toss well to coat everything evenly. Taste and
adjust seasoning if needed. Serve immediately or refrigerate for 30 minutes to let
the flavours develop.
