Lentil Herb Crunch Salad

Ingredients: (Makes 3)
- Cucumber 1, large
- Parsley 2 tbsp
- Salt 1 pinch
- Green Lentils 1 tin, cooked
- Red Pepper 2, medium
- Red Onion 1, small
- Olive Oil 3 tbsp
- Lemon Juice 1 lemon
- Black Pepper 5 twists
- Coriander 2 tbsp
Instructions:
In a large bowl, combine the diced cucumber, chopped red pepper, finely
chopped red onion, and fresh herbs.
Drain and rinse the lentils, then add to the bowl with the veggies. Sprinkle in the
salt and pepper, drizzle over the olive oil, and squeeze in the lemon juice. Mix
thoroughly to ensure everything is evenly coated and vibrant
