Herby Feta & Avocado Salmon

Ingredients: (Makes 2)
- Salmon Fillet 2, average fillet
- Black Pepper 5 twists
- Paprika ¼ tsp
- Salt pinch
- Avocado 1 small
- Feta Cheese 40g or 1.4oz
- Fresh Chives 2 tbsp
- Fresh Dill 2 tbsp
- Lemon Juice & Zest 1 lemon
- Olive Oil 1 tsp
- Fresh Dill 1 tbsp
Instructions:
Preheat your oven to 200°C (390°F) fan.
In a small bowl, mix the olive oil, lemon juice, zest, 1 tbsp dill, and paprika. Rub this
over the salmon fillets and allow to sit for 5–10 minutes while the oven heats.
Place the fillets on a lined baking tray and roast for 13–15 minutes, or until cooked
through and flaky.
While the salmon cooks, dice the avocado and mix with dill, chives, and crumbled
feta. Season with a little salt and black pepper.
Once the salmon is cooked, plate each fillet and spoon the avocado-feta topping
over. Serve with your favourite salad, grains, or roasted vegetables.
