Fluffy Cottage Cheese Pancakes
Ingredients: (Makes 1)
- Cottage Cheese 100g or 3.5 oz
- Vanilla Extract 1/2 tsp
- Baking Powder 1/4 tsp
- Lemon Zest 1 lemon
- Egg 1
- Plain Flour 1 heaped tbsp
- Porridge Oats 2 tbsp
- Peanut Butter 1 tsp
- Raspberries 5
- Blueberries 5
- Maple Syrup 1 tsp
Instructions:
In a mixing bowl, combine fat-free cottage cheese, plain flour, baking powder, egg,
2 tbsp oats, zest from 1 lemon, and a few drops of vanilla essence. Mix until well
combined and you have a smooth batter.
Preheat a non-stick skillet or frying pan over medium heat. You can lightly grease
it with a bit of olive oil if desired. Once hot, spoon the batter onto the skillet to form
small pancakes. Cook for about 2-3 minutes on each side, or until they’re golden
brown and cooked through. Transfer the pancakes to a serving plate.
Top your pancakes with blueberries and raspberries. Drizzle over with 1 tsp of
maple syrup and your peanut butter. Dig in while they’re still warm!
