Crunchy Chili Oil Toast

 

Ingredients: (Makes 1)

  • Egg 1
  • Avocado 1 small
  • Cottage Cheese 50g or 1.8oz, fat free
  • Sourdough 1 slice
  • Chilli Crunch Oil 1 tsp
  • Spring Onion 1
  • Honey 1/2 tsp
  • Black Pepper twist

Instructions:

Begin by toasting the sourdough bread to your preferred level of crispiness. A
toaster or a hot skillet can be used for this step. Set the toasted bread aside on a
serving plate.

Heat the chili oil in a small frying pan over medium heat. Once hot, crack the egg
into the pan. Fry until the whites are set but the yolk remains runny, or cook to your
liking. Gently season with a pinch of pepper if desired.

While the egg is cooking, slice the avocado thinly. For an easier spread, you can
also mash the avocado with a fork if preferred.

Spread the fat-free cottage cheese evenly over the toasted sourdough slice.
Arrange the avocado slices on top of the cottage cheese. Once the egg is cooked,
place it carefully on top of the avocado.

Drizzle the honey over the assembled toast for a touch of sweetness that
complements the heat from the chili oil. Sprinkle sliced scallions and an extra twist
of pepper over the top for added flavor and a pop of color.
