Mediterranean Chicken Burgers
Ingredients: (Makes 2)
- Sweet Potato 300g or 10.5oz
- Chicken Mince 160g or 5.6oz
- Potato Buns 2
- Salad Tomato 1
- Greek Yoghurt 40g or 1.4oz, 0% fat
- Cajun Seasoning 1 tbsp
- Honey 1 tsp
- Fresh Basil 5 leaves
- Cornflour 1 tsp
- Olive Oil 1 tsp
- Sundried Tomato 4
- Feta Cheese 20g or 0.7oz
- Little Gem Lettuce 2 leaves
Instructions:
Preheat your oven to 200°C (fan).
Cut the sweet potatoes into wedges and place them in a large mixing bowl. Toss
with 1 tablespoon of olive oil, 2 tablespoons of cajun seasoning, and 1 teaspoon of
cornflour. Arrange in a single layer on a baking sheet and roast for 25-30 minutes
until golden and crispy. Season with salt before serving.
In a mixing bowl, add the chicken mince, diced sun-dried tomatoes, chopped
basil, and lemon zest. Gently mix until combined, being careful not to overwork the
meat. Divide the mixture into 2 equal portions and shape into burger patties.
In a small bowl, mix together the thick yogurt, feta and honey. Season with salt and
pepper, and set aside.
Heat a non-stick frying pan over medium heat. Fry the chicken patties for about 2
minutes on each side. Once sealed, place in the air fryer for 8 to 10 minutes to cook
through. Meanwhile, toast the burger buns until slightly crispy.
Spread the yogurt sauce on the bottom half of each toasted bun. Layer with little
gem lettuce, a slice of tomato, and the cooked chicken burger. Serve with the
crispy sweet potato wedges on the side.
