TUNA SWEET POTATO JACKETS

Ingredients:
- 250g sweet potatoes
- 150g can tuna in water/brine, drained
- 50g red onion, finely sliced
- 3g red chilli, deseeded and chopped
- 1 teaspoon lime juice
- 2 tablespoons low-fat Greek yoghurt
- 5g coriander leaves
- Salt and pepper to taste
Instructions:
- Scrub the sweet potatoes and prick them all over with a fork. Place on a microwaveable plate and cook on High for 18-20 minutes, or until tender. Split in half and place each cut-side up on a serving plate.
- Meanwhile, mix the tuna and the rest of the ingredients and set aside, season the mixture with a dash of salt and pepper
- Once the potatoes are cooked add the tuna mixture on top. Serve warm or chilled.
