TUNA SWEET POTATO JACKETS

Ingredients:

  • 250g sweet potatoes 
  • 150g can tuna in water/brine, drained
  • 50g red onion, finely sliced
  • 3g red chilli, deseeded and chopped
  • 1 teaspoon lime juice 
  • 2 tablespoons low-fat Greek yoghurt
  • 5g coriander leaves
  • Salt and pepper to taste

Instructions:

  • Scrub the sweet potatoes and prick them all over with a fork. Place on a microwaveable plate and cook on High for 18-20 minutes, or until tender. Split in half and place each cut-side up on a serving plate.
  • Meanwhile, mix the tuna and the rest of the ingredients and set aside, season the mixture with a dash of salt and pepper
  • Once the potatoes are cooked add the tuna mixture on top. Serve warm or chilled.
