GROUND RICE SKILLET

Ingredients:
- 150g Ground Red Meat (Lean Beef, Veal, Lamb Leg, Kangaroo, Goat, Camel)
- 100g canned whole-kernel corn
- 50g Bell pepper
- 65g (raw weight) Basmathi rice
- 1 teaspoon extra virgin olive oil (7g)
- 50g onion, diced
- 300ml water
- 1 teaspoon ketchup
- 1 teaspoon taco seasoning
- 45g low-fat mozzarella, shredded
Instructions:
- Heat oil in a large skillet over medium heat;
- Add the onions to the skillet and heat for 2-3 minutes until just starting to turn translucent;
- Mix in the ground beef and break it up with a spoon then cook for 8-10 minutes breaking up the beef as it cooks;
- Mix in the taco seasoning and stir to combine;
- Pour the uncooked rice, corn, and water into the skillet and stir well then cover and simmer for 15 minutes;
- Stir the beef and rice mixture 2-3 times while cooking;
- Mix in the cheese and stir well then Let sit for 5 minutes before serving.
