SWEET POTATO SALAD

Ingredients:

  • 150g sweet potatoes, peeled and cubed 
  • 1 teaspoon extra-virgin olive oil (7g)
  • 50g red onion, thinly sliced 
  • 10g raisins
  • 40g crumbled feta

For The Dressing:

  • 2 tablespoon. apple cider vinegar
  • 1 tablespoon. Dijon mustard
  • 1 tablespoon. Sugar-free syrup
  • 1/2 teaspoon. ground cumin
  • 1/4 teaspoon. ground paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°. On a large rimmed baking sheet, toss sweet potatoes, red onion and oil then season with salt and pepper. 
  2. Distribute them evenly on a sheet in a single layer. Bake until tender, for about 20 minutes. Let cool for 10 minutes then transfer to a large bowl.
  3. Meanwhile, make the dressing: In a small bowl or a medium liquid measuring cup, whisk together vinegar, mustard, honey, and spices. Whisking constantly until emulsified. Season with salt and pepper. 
  4. Toss sweet potatoes with dressing, raisins, and feta cheese. Serve warm or at room temperature.
