CUCUMBER DIP

Ingredients:

  • 1 teaspoon extra virgin olive oil (7g)
  • 100g cucumber
  • 150g carrot
  • 100g bell pepper
  • 10g mint, chopped
  • 50g Greek yogurt 
  • 10g walnuts, chopped 
  • Salt and pepper to taste

Instructions:

  1. Grate the cucumber. Then squeeze the grated cucumber to get rid of the excess liquid. You can do it with a towel or just with your hands.
  2. Now mix all the chopped ingredients except carrots and bell pepper and season with salt and pepper. 
  3. Serve the dip with carrots and bell pepper.
