Ingredients:

  • 45g Oats
  • 1 teaspoon extra virgin olive oil (7g)
  • 150g mushrooms
  • 50g baby Spinach
  • 45g Parmesan cheese, grated
  • 50g shallot, chopped
  • 1 sprig of thyme
  • 150ml Water
  • Salt and pepper to taste

Instructions:

  1. Cook sliced mixed mushrooms in olive oil in a large nonstick skillet over medium-high heat until browned. Keep aside.
  2. Then add oats, minced shallot, and chopped thyme to the skillet; cook, tossing, until lightly toasted, 1 minute.
  3. Next, add water and bring to boil.
  4. Season with salt and a pinch of pepper.
  5. Simmer, stirring often, until tender and saucy, for 10 minutes. Stir in the mushrooms, baby spinach, and grated parmesan.
