TUNA POTATO SALAD

 

Ingredients:

  • 250g Carisma Potatoes, washed
  • 100g cucumber; peeled, deseeded and sliced
  • 50g sliced red onion
  • 2 tablespoons fresh chopped dill seed
  • 150g can Tuna (in water or brine) 
  • 50g non-fat plain Greek yoghurt
  • ½ teaspoon thyme
  • ½ teaspoon tarragon
  • 1 teaspoon lemon juice
  • 10g coriander leaves
  • Salt and black pepper to taste

Instructions:

  1. Cook potatoes in salted boiling water until tender; cool completely.
  2. Cut into 1/2-inch chunks.
  3. In a large bowl, combine potatoes, cucumber, onion and dill; set aside. 
  4. In another bowl, lightly toss tuna with Greek yoghurt.
  5. Gently fold tuna mixture into potato mixture.
  6. Season to taste with black pepper.
  7. Top with chopped coriander
  8. Cover and chill until ready to serve.
