AIR-FRYER BERRY OATMEAL BALLS

 

Ingredients:

  • 45g oats
  • 240ml almond milk
  • ½ teaspoon vanilla extract
  • 1 tablespoon sugar free syrup
  • 1/4 teaspoon cinnamon
  • 100g frozen blueberries or strawberries 
  • 1 whole egg beaten 
  • 50g Panko crumbs
  • 30g all-purpose flour
  • Salt to taste

Instructions:

  1. Pour the milk into a medium saucepan. Bring to a boil over medium-high heat.
  2. Add the oats and salt to the pan, stir, and reduce the heat to a low simmer.
  3. Cook for 10-15 minutes, stirring often until the oats are thick and cooked through.
  4. Remove from the heat and stir in the vanilla, sugar free syrup, cinnamon, and blueberries or chopped strawberries.
  5. Allow cooling completely before moving on.
  6. Preheat air fryer to 350ºF
  7. Place egg, panko, and flour in three separate bowls. Using 1 1/2 tablespoon cookie scoop, make a ball with your cooled oat mixture.
  8. Dip oat ball in the flour, then the egg, then the panko crumbs until evenly coated.
  9. Place in the cooking basket in the air fryer. You may need to cook in batches.
  10. Fry for 12-14 minutes, shaking halfway through, until golden brown.
