CAULIFLOWER FRIED “RICE”

 

Ingredients:

  • 250g cauliflower, grated
  • 1 piece kale leaves
  • 1 teaspoon butter (7g)
  • 150g egg white
  • 1/4 teaspoon fresh ginger
  • 1/2 teaspoon turmeric
  • 20g coriander
  • 2 tablespoon coconut water
  • 1/2 Lime
  • 20g spring onions
  • 10g parsley
  • 10g mint leaves
  • 30g roasted almonds
  • 1/2 tablespoon tamari soy sauce
  • 1/2 tablespoon Mirin
  • 1 Green Chilli
  • Salt and pepper to taste

Instructions:

  1. Chop the cauliflower into small pieces and place into a food processor.
  2. Process until it looks like white rice.  If you don’t have a food processor, you can also do this on a hand grater.
  3. Heat the butter in a pan over a medium to high heat.
  4. Add ginger, turmeric and coriander along with chopped green chilli, then stir fry for a few seconds until aromatics are released.
  5. Add the cauliflower and kale and stir fry for a few minutes until hot and fragrant.
  6. Deglaze the pan and add a splash of coconut water or water to the pan.
  7. Add the beaten egg whites and mix through.
  8. Add spring onion, coriander, parsley, mint, tamari and mirin.
  9. Mix in the almonds.
  10. Squeeze over a little lime and serve.
