ROASTED STRAWBERRY SMOOTHIE

 

Ingredients:

  • 150g fresh strawberries, quartered
  • 1 teaspoon sugar (4.2g)
  • 50 g reduced fat cottage cheese
  • 200ml almond milk
  • 100g crushed ice, or as needed
  • 1 teaspoon chia seeds
  • 1 tablespoon sugar free syrup

Instructions:

  1. Preheat oven to 425°F.
  2. In a medium bowl, combine strawberries and sugar.
  3. Pour the strawberries on a parchment paper lined baking sheet.
  4. Place in the oven and roast for 12 to 15 minutes until the strawberries start to release their juices but are still firm.
  5. Carefully pour the roasted strawberries and their juice into a blender along with cottage cheese, milk, ice and chia seeds, sugar free syrup and blend until smooth.
  6. Enjoy!
