GARDEN TUNA SANDWICH

 

Ingredients:

  • 150g canned tuna, drained
  • 30g fresh fennel chopped
  • 50g Green apple
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 tablespoon Parsley 
  • 1 tablespoon lemon juice
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon lemon zest
  • 2 slice white bread
  • 40g tomato, sliced
  • 10g lettuce leaves
  • Salt to taste

Method:

  1. Combine the tuna, fennel, apple, parsley, lemon juice, fennel seeds, coriander, zest, and salt and toss well. Line the bread slice with a lettuce leaf and tomato slices. Spoon tuna salad onto the sandwich. Serve immediately.
