TURKEY PUMPKIN CHILI

 

Ingredients:

  • 1/2 medium onion chopped
  • 1 teaspoon extra virgin olive oil (7g)
  • 2 cloves garlic minced
  • 150g boneless turkey breast 
  • 50g bell pepper chopped
  • 1 diced tomato 
  • 250g pumpkin
  • 1 teaspoon chilli powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper optional
  • 200ml chicken stock 
  • Salt & pepper to taste
  • 1 tablespoon chopped cilantro 

Method:

  1. In a soup pot over medium-high heat, sauté the onion with the olive oil for 5 minutes.
  2. Add the garlic and meat and continue cooking for approximately 7 minutes.
  3. Add the remaining ingredients to the pot and give it a good stir. Increase the heat to high, and just when it starts to boil, reduce the heat so it is simmering. Cook the chili for 15-20 minutes, stirring periodically.
