STIR-FRY BEEF RICE
Ingredients:
- 150g Lean beef, sliced
- 130ml water
- 65g basmati rice (raw)
- 1 teaspoon extra virgin olive oil (7g)
- 1 tablespoon corn-starch
- 1 cloves garlic, minced
- ½ teaspoon minced ginger
- 1 teaspoon soy sauce
- ½ teaspoon sugar free syrup
- 30g green onions sliced into 1-inch pieces
- 120g carrot
- 1/2 teaspoon toasted sesame seeds
- salt and pepper to taste
Method:
Step 1
Place rice in a small saucepan and add water. Simmer covered, for 10-15 minutes or until cooked. Season sliced beef with salt and pepper. Toss steak in corn-starch until fully and evenly coated. Set aside. Place a large skillet over medium-high heat and add oil. Add garlic and ginger and sauté for 1 minute. Add soy sauce, water and sugar syrup and bring to a boil until dissolved, about 2 minutes.
Step 2
Pour sauce into a liquid measuring cup and set aside. Place skillet back overheat and add remaining oil. Add steak and sear until evenly browned on both sides, 1 to 2 minutes per side. Pour sauce back into skillet and toss together with meat. Allow sauce to thicken, 1 to 2 minutes.
Step 3
Toss in green onion and carrot and continue to cook for 2 more minute until sauce is thick enough to coat the back of a wooden spoon. Pour beef over steamed rice and serve.
