WHITE FISH WITH ASPARAGUS BUNDLES AND APPLE CIDER SAUCE
Ingredient:
- 150g whitefish fillet
- 200g asparagus spears, trimmed
- 50g green onions, chopped
Sauce:
- 50ml apple cider vinegar
- ½ red apple
- ½ teaspoon corn-starch
- ½ teaspoon lemon juice
- ½ teaspoon dried basil
- 1 teaspoon sugar free syrup
- Salt and ground black pepper to taste
Instructions:
Step 1
Preheat oven to 350 degrees F (175 degrees C). Grease a baking pan.
Step 2
Season the fish and blanched asparagus with salt and pepper, then place in prepared baking pan. Cover with foil and bake for 10 minutes.
Step 3
Remove the foil and sprinkle the chopped green onion over the fish. Return the pan, uncovered, to the oven to bake for an additional 5 to 10 minutes, or until fish flakes easily with a fork.
Step 4
While the fish is baking, heat the apple cider and chopped apple in a small saucepan over medium heat. In a small bowl, combine the corn-starch and lemon juice and whisk until there are no visible clumps. Add the corn-starch mixture to the vinegar, cooking and stirring to prevent lumps. Add the dried basil and black pepper, sugar free syrup and continue to cook for 2 minutes or until the sauce is thickened.
Step 5
To serve, spoon the sauce over top.
