GREEK CHICKEN WITH FETA AND DILL

 

Ingredients:

  • 1 teaspoon olive oil
  • 150g boneless chicken breast
  • 100g tomatoes
  • 75g zucchini
  • 75g cucumber
  • ½ teaspoon salt
  • 1 sprig fresh dill

Topping Ingredients:

  • 1 teaspoon fresh dill finely chopped
  • 20g feta cheese finely chopped
  • ½ teaspoon lemon juice

Method:

  • Preheat oven to 400c for 10 minutes.
  • Drizzle the oil on a large sheet pan. Put the chicken, tomatoes, dill, and zucchini on the tray. Sprinkle with salt. Bake for 30 minutes.
  • Meanwhile, stir together the topping ingredients.
  • After 30 minutes the chicken should be cooked through. Remove the chicken to a serving tray. Turn the broiler on. Put the tray of veggies on the top oven rack. Broil for 3-5 minutes or until they are beginning to brown and look roasted. Discard the cooked dill sprigs.
  • Put the veggies on top of the chicken on the serving tray. Sprinkle the feta mixture on top.
