HASSEL BACK POTATOES

 

Ingredients:

  • 200g Carisma potatoes
  • 1 tsp olive oil. (7g)
  • 50g bacon chopped
  • 20g mozzarella cheese
  • 50g panko breadcrumbs
  • 1 tbsp chopped sage, plus extra sage leaves, to serve 

Method:

Step 1

Preheat the oven to 200C or 180C.

Step 2

Place one potato on a chopping board, place a chopstick on board along each side of the potato. Slice potato thinly, cutting through to chopstick level to prevent cutting all the way through. Repeat with remaining potatoes. Place in a baking pan, cut side up. Drizzle over oil and season. Bake for 35mins, or until potatoes are tender. Remove from the oven.

Step 3

Press bacon randomly into potato slices. Mix cheese, breadcrumbs, and sage. Sprinkle over potatoes. Bake for a further 20 mins, or until the topping is brown and crisp. Serve topped with extra sage, if using.
