CREAMY CHICKEN AND MUSHROOM PASTA

 

Ingredients:

  • 150g chicken breast, boneless and skinless
  • 65g pasta raw (any choice penne or spaghetti)
  • 100g mushroom
  • 75g potatoes
  • ½ medium Onion sliced
  • 3 garlic cloves
  • Almond milk 200ml
  • 1tsp olive oil
  • 10g parmesan cheese
  • 1tsp chilli flakes
  • Salt and pepper to taste

Method:

  • Heat some oil in a skillet and sauté onion and garlic.
  • Then gradually add the diced potatoes and the sliced mushrooms and cook until golden brown.
  • Add the diced chicken sauté for 2 min in low flame.
  • Add the almond milk and cook the chicken thoroughly.  Reduce the milk by half and add the boiled pasta
  • Season with salt and pepper and mix in the parmesan cheese.
